Cantaloupe Granita Recipe
Cantalopes are in season during the summer and are sweet and juicy. Making it a perfect canidate for a frozen dessert. Granita is very similar to a sorbet or icy, but its method is different. Granitas do not require any fancy equiptment to make, all you need is a blender or food processor. Then the texture is formed by scraping the frozen mixture so it resembles shaved ice. You can use Basil or Mint or both for this recipe. Both are delicious! This is a guilt free dessert that will surely impress everyone :)
1/2 of a cantalope, rough choped
1/2 cup water
2 tablespoons agave or honey
8-10 leaves of basil or mint, torn by hand
step 1- put all ingredients in the blender and puree until smooth
step 2- pour cantalope mixture into a shallow dish uncovered
step 3- stir mixture every hour until it resembles a slushy
step 4- cover with a lid or syran wrap once it's frozen
step 5- scrap granita with a fork and spoon into a bowl

Uncooked CAPONATA over NOODLES or as a DIP- Raw Food Recipe
If you've never tried caponata please give this receipe a try. It is delicious on its own, as a dip or on top of zucchini or kale noodles! The traditional recipe calls for eggplant, but this vegetable does not taste great raw. so i substituted cauliflower. The flavor of my raw caponata tastes almost exactly the same as the cooked version i use to make. This sauce is tangy, sweet and salty all in one bite and was so yummy over kale noodles. I will be making this over and over again:)
Caponata Sauce
3 cups Tomatoes, diced
2 cups Cauliflower florets, broken in pieces
1/2 cup Red bell pepper, diced
1/2 cup Calamata Olives, diced
1/2 cup Raisens soaked in 3T Apple Cider Vinegar
2 cloves Garlic, sliced
1T Basil, chopped
Raw Noodles of your choice or Raw vegetable chips
step 1- Put all ingredients in the food processor and pulse until ingredients are finely chopped.
step 2- Put over noodles or use as a dip for vegetables

GREEN Smoothie- Papaya-Orange-Banana-Coconut Water-Spinach
I love green smoothies because it is such a great way to get your fruit and vegetables in one serving and it taste great!! I had some papaya left over from a tropical salsa i made the other day, so that was the base for this smoothie. Fresh coconut water can be found in Asian markets or Wholefoods or you can use cartons of coconut water. Spiach is a mild sweeter green that is less obvious in a smoothie, which makes it perfect for giving to your kids. Give this a try. It makes a delicious on the go breakfast or snack.

1 each Orange, rough chop
Water from 1 young Thai Coconut (about 11 ounces)
2 c Spinach
step 1- Strain the coconut water and add to the blender
step 2- Add all the fruit and puree for 1 minute

Almond Joy Candybar- Raw Food Recipe
It always helps to have a really easy dessert recipe on hand. This candybar recipe can be made days ahead of time and kept in the refrigerator or it can be frozen. I have always been a fan of the candy bar Almond Joy because of the chocolate and coconut, but never buy it because it is so unhealthy. This raw version has only four ingredients and really satisfies your sweet tooth!! You can enjoy the bars right after you make them and eat them with a spoon or chill them for at least an hour in the refrigerator or freezer for bars you can hold.
Recipe will make 4 mini Candybars

2 T Cacao Powder
2 T Agave or Liquid Sweetner of Choice
1/2 c Coconut, shredded and unsweetned
Step 1- In a bowl mix together almond butter, cacao and agave until well blended
Step 2- Put coconut in a bowl
Step 3- In batches, drop 1 tablespoon of almond mixture into coconut and coat on both sides
Step 4- Put bars on a plate and shape into small rectangles
Step 5- Refrigerate until firm enough to pick up (about an hour)
