Pumpkin Hummus- Raw Vegan Recipe
This is a really tasty appetizer that is perfect for any occassion. It is very easy to prepare and is a great accompiment to raw veggies. The texture is creamy and the flavor is rich and savory, very similar to the traditional hummus made with beans. Enjoy!!

Uncooked CAPONATA over NOODLES or as a DIP- Raw Food Recipe
If you've never tried caponata please give this receipe a try. It is delicious on its own, as a dip or on top of zucchini or kale noodles! The traditional recipe calls for eggplant, but this vegetable does not taste great raw. so i substituted cauliflower. The flavor of my raw caponata tastes almost exactly the same as the cooked version i use to make. This sauce is tangy, sweet and salty all in one bite and was so yummy over kale noodles. I will be making this over and over again:)
Caponata Sauce
3 cups Tomatoes, diced
2 cups Cauliflower florets, broken in pieces
1/2 cup Red bell pepper, diced
1/2 cup Calamata Olives, diced
1/2 cup Raisens soaked in 3T Apple Cider Vinegar
2 cloves Garlic, sliced
1T Basil, chopped
Raw Noodles of your choice or Raw vegetable chips
step 1- Put all ingredients in the food processor and pulse until ingredients are finely chopped.
step 2- Put over noodles or use as a dip for vegetables

Salsa Salad + Where to find pics of Food
Got a favorite Salsa Recipe but always wait to make it when you have tacos or need a dip. A great way to enjoy your salsa anytime is to cut the pieces larger and eat on its own or put over a bed of greens. You don't even need a dressing because the salsa is already so flavorfull. Maybe just a lime wedge or two to squeeze over and your good to go. I really love all kinds of salsa, but this time i couldn't make up my mind, so i decided to make it a fruit/traditional/guacamole type Salsa. With all these fresh ingredients...How can it taste bad right? Feel free to make you own combo or use mine:) Really no right or wrong measurement....just go with the flow.
Salsa Salad y=2 servings
3 each Tomatoes, med dice
1 each Cucumber, seeds removed, sliced
1 each Green Onion, thinly sliced
1 ear Corn, kernels removed
1 each Mango, med dice
handfull fresh herbs- i used Basil and Mint (cilantro would be great too, but Jenn hates it), chopped
Juice and Zest of 1/2 Lime
1 T Chili Pepper, thinly sliced
1 each Avocado, med dice
Salt and Pepper to Taste
Greens of Your Choice- I used Spinach
step 1- Mix everything in a bowl
step 2- Taste for seasoning
step 3- Spoon over a bed of Greens
step 4- take the other 1/2 of lime and cut in 2 and put on each plate for extra dressing
step 5- Enjoy!!

RAW Collard Wrap w/ Fresh Beet Salad in a Peach-Poppyseed Dressing
A friend of mine had picked collards and beets today and gave me some of each. It is so nice to be able to eat something that has been picked only a few hours ago, so i knew i had to make something with these two things. The first dish that came to my mind was to make a salad with the beets, but after tasting the salad i thought...i bet this would go great in the collard as a wrap. Let me tell you, it was Awesome together. The only thing i wish i had made more of was the peach-poppyseed dressing (i have a video for that too under salad dressings) so we could of dipped our wraps in more of the sauce. So make extra dressing:) I used a mandoline to slice my beets to get them very thin, but you could use a vegetable peeler or grate them in the food processor. Make sure to cut out the stem from the collard greens, they can be a little tough. Enjoy!!!
Fresh Beet Salad
3 each Beets, i used red, yellow and candy striped, thinnly sliced
2 each Carrots, sliced thin
2 stalks Celery, sliced thin
6 each Collard leaves
Peach-Poppyseed Dressing y= about 1/2 c (multiple by 2 if you want some to dip in)
1 each Peach, fresh or 1/2c thawed frozen, rough chopped
Juice of 1 lemon
2T Honey or other sweetner
1/2T Poppy-seeds
step 1- put peaches, lemon juice and honey in blender
step 2- puree until smooth
step 3- add poppyseeds and pulse just to mix in
step 4- put all the ingredients in beet salad in a bowl and toss with dressing
step 5- Lay you collard green down on a cuttiing board and fill with salad in the center only
step 6- Roll wrap like you would a burritto and cut in half on an angle
step 7- eat up with some dipping sauce on the side:)

Day 2- Open Faced HUMMAS Sandwiches- RAW VEGAN
This has to be one of my favorite raw vegan recipes so far. I love making dishes that really do taste like the original or better. Hummus is such a popular dip or spread for a sandwich, but is made with beans. Since I do not eat beans, I decided to make my version the same way i would normally make hummus, but with zucchini instead of the beans! OMG was it amazing....honestly it tasted so close to the original that most people probably would have no idea it was made with zucchini. I had this for lunch over some sliced tomatoes and other veggies on top like an open faced sandwich. Feel free to serve as a dip to a crudite platter at a party or for a snack. The kids willl like this too:)
Hummus y= 3cups
3 ea zucchini, peeled and rough chopped
juice of 1/2 lemon
2T tahini, untoasted
2ea garlic cloves
salt and pepper to taste
step1- put all ingredients in the food processor and blend until smooth
step2- taste for seasoning and enjoy anyway you'd like:)

Papaya Guacamole on Tomato "toast"- Raw Vegan 80/10/10 ok
Hi there. Hope you had a great holiday weekend! I wanted to have something for breakfast this morning besides my normal smoothie or fresh fruit. I was limited by the ingredients in my house since i had gone away this weekend and hadnt been to the store yet. I had a papaya and some avocados that were ready to eat as well as some misc. items in the fridge, so i decided to make a papaya guacamole and put it over some sliced tomatoes!!! OMG was this absolutely delicious!!! and perfect for something a little more savory. You could serve this at a party or as an appetizer or eat as a snack or meal. This combo might sould a little odd, but the ingredients go great together. Kids will enjoy this recipe too and any raw foodie:)
Papaya Guacamole y=2-4 servings
1 Avocado
1/4 Papaya, red carribean
2T red onion, finely chopped
1/2- 1 t jalapeno, finely chopped
juice of 1/2 lime
salt and pepper to taste
4 tomatoes, sliced
step 1- peel papaya and deseed, rough chop
step 2- finely chop onion and jalapeno
step 3- chop or squeze avocado in a bowl
step 4- add all ingredients to the avocado and mash together with a fork
step 5- put in a bowl with sliced tomatoes around or spoon guacamole on top of tomatoes
step 6- Enjoy:)
